| Marinated sea-bass |
To serve with: Château de ROLLAND Bordeaux blanc sec
For 4 persons
Ingredients :
- 2 fillets of sea-bass of 250 g (9 ozs) each, without bones and flesh.
- ½ sweet red pepper
- 4 tablespoons olive oil
- 1 pressed lemon juice
- ¼ teaspoon Cayenne pepper
- fine salt
- chervil
- chive
- tarragon
Recipe:
Make sure that the fish is bone-free; remove them if necessary with a tweezers. Put the fillets for 5 minutes in the freezer so that you can cut them more easily. Cut them into dices. Remove the peps and the core from the sweet pepper and cut it into dices.
Mix olive oil and lemon juice with salt and Cayenne pepper. Mix the fish, sweet pepper and vinaigrette together. Let it marinate in the freezer for 1 hour.
When serving, dispose some washed and dried herbs. Mix once again the ingredients with the fish and adjust seasoning.
Put in the middle of each plate a quarter of the mixture and serve cool CHATEAU DE ROLLAND BORDEAUX BLANC SEC.
