| The true Nicoise salad |
To serve with: Château de Rolland Bordeaux blanc sec
Ingredients :
- 1 small salad
- 6 tomatoes
- 150 gr (5.25 oz) green beans
- 1 cucumber
- 1 green pepper
- 2 small artichokes (not necessary)
- 3 hard-boiled eggs
- 3 small onions
- 100 gr (3.5 oz) thuna fish in pieces
- 8 anchovy fillets
- 1 bouquet of basil
- 25 small black olives
- 1 garlic clove
- vinegar, olive oil, salt, pepper
Recipe:
Boil the eggs for 10 mins. Chop the tomatoes into wadges, peel and cut the cucumber in thin slices.
Put the anchovy fillets, remove the peps and mince the green pepper in thin slices, snip the top and tails off the green beans and cut the onions in slices.
(Cut the artichokes in 4 pieces and remove the leaves) chop the eggs in slices.
Brush the inner edges of a salad bowl with the garlic cut in two and add all the ingredients. Make a salad dressing with 6 tablespoons olive oil, 1 tablespoon vinegar, the chopped basil, salt and pepper.
Pour in the bowl, mix it and serve it cool with CHATEAU DE ROLLAND BORDEAUX BLANC SEC.
