| Fillets of duck with honey and cinnamon |
For 6 persons
Ingredients:
- 3 fillets of duck with flesh
- 1 tablespoon cinnamon
- 4 tablespoons honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons water
- Salt
- Pepper
Heat up the oven to 240 °C (464 °F).
Make some cuts in the flesh of the fillets (so that they lose as much fat as possible). Saute them on the flesh-side in a non-stick cookware for 4 minutes. Remove the fat of cooking and let cook the other side of the fillets for 4 minutes.
Put the fillets in a roasting pan. Brush them with a mixture of honey (3 tablespoons), pepper, cinnamon and salt. Let it cook in the oven for 10 minutes.
Cut each fillet in thin slices. Retrieve blood and the gravy from the pan. Dilute it with 1 tablespoon honey, 2 tablespoons vinegar and 2 tablespoons water. Pour it over the fillets and serve it hot.
